Provisions Delicatessen and Specialty Food Market

Provisions Delicatessen operated in Port Townsend Washington offering specialty foods in the pantry. And from the kitchen, homemade food to go of robust flavors and quality were served.

Proprietors Candace Hulbert and Hope Borsato teamed up to develop this business in the small town of ten thousand. These gals were ahead of their time with recipes and insights stemming from the New York Times, Gastronominique….and their interpretations. They too would offer that home comfort food such as Buttermilk Fried Chicken. Customers would book this item weeks ahead of its production.

Utilizing wholesome foods, they supported the local farms and attempted to purchase organic vegetables at every opportunity.

They offered their employees a place to cook, enjoy food and serve quality coffee, lunch, dinner in an environment quite unique in the industry. The delicatessen was housed in a quaint building on 19th and Kearney. Their customers were truly saddened by their closure and termed each last dinner as “a series of last suppers”. Services will be Saturday, March 29th for all those who wish to clean out shelves, mop floors and share in their sadness.
